PROSCIUTTO COTTO - prosciutto is slowly cooked at controlled temperatures, then cut into tender, moist slices.

BRASIOLA - Bresaola is air-dried, salted beef that has been aged two or three months until it becomes hard and turns a dark red, almost purple colour. It is made from top round, and it is lean and tender, with a sweet, musty smell.

MORTADELLA - finely hashed heat-cured pork salami, which incorporates lard of pork. It is delicately flavoured with spices, including pepper with pieces of pistachio nuts.

COPPA - Cured pork shoulder has a rich earthy flavor that will melt your taste buds.
